Grilled Giant Fresh Water Prawns with Green Chilli Dressing
Ingredients
¼ cup Green Chilli Finely Minced
¼ cup Cilantro Finely Minced
1 clove Garlic Finely Minced
2 tbsp Lime Juice
3 tbsp Water
1 ½ tbsp Fish Sauce
Preparation
- With a scissor, cut the front tentacles and long legs on the prawn head and the short back legs. Cut open the prawn by cutting the shells on the belly of the prawn starting from the head and all the way through to the tail. Once it is through, use your hands to flare open the prawn to expose the meat and head matter. Scoop out the prawn head butter (yellow stuff) into a bowl and set aside. Clean out the brown/black sack found in the back of the head and pull out the vein that runs through the back of the prawn. Rinse the prawn under water.
- Scoop the prawn head butter back into the prawn head On medium low heat, place the prawns shell down on the grill and cook until the meat is no longer translucent and then heat butter begins to simmer about 5-8 min.
- In a blender, Add green chilli, cilantro, garlic, lime juice, water and fish sauce. Blend until all herbs are finely chopped. Serve prawns and sauced.
